Homemade Granola

Hi all!

So being on a bit of a health kick I decided to also kick the packaged muesli to the curb and make my own! It's so easy, healthy and super delicious!

This would be a cute wedding idea too! small jars with sweet packaging as a favour, or larger beautifully packaged jars for your mum, future mother in law or bridesmaids.

Here is my recipe:

// 2 cups of raw, whole rolled oats
// 1/2 cup almonds
// 1/4 cup mixed seeds (i used a mixed bag including sunflower kernels and pepitas)
// 1/4 cup mixed raisins and sultanas
// 1/2 cup shredded coconut
// 2-3 table spoons of good quality maple syrup or honey
// 2 tbsp coconut oil (I used an odourless one)
// 1/2 tsp vanilla extract
// 1 large pinch of sea salt.

Preheat the oven to 150ÂșC. Combine all the ingredients in a large mixing bowl, use clean hands to thoroughly mix all the ingredients together. Make sure the coconut oil is mixed through properly especially if you're working with solid coconut oil.  

On a baking tray lay out a sheet of baking paper, spread the mixture in a thin layer evenly over the paper. Put in the oven for 10 minutes or until the granola is nicely browned. Can be kept in an air tight container for approximately 2 weeks.

The honeymoon

Hi all!

Happy Monday! Here is a little snippet of some of my favourite shots from our honeymoon. 6 weeks all up in Thailand, London and New York and to say it was incredible is a massive understatement!

Some highlights from our trip were:

* Ice skating in Central Park
* New York's museums
* Playing in the snow in Central Park
* Watching the sunset behind Brooklyn Bridge
* NY SHOPPING!
* Wandering the streets on NY getting lost
* Doing absolutely nothing but lazing on the beach in Thailand getting massages and drinking fresh coconuts everyday!
* Our day trip from Krabi beach to Phi Phi Islands

And so much more!
